Matthew began his career 25 years ago working with his father at their family business, Jacksons Fishmongers, which was established back in 1922. Purchasing the freshest, day boat fish from Brixham, Matthew places a high emphasis on sustainable seafood and seeks seafood caught by vessels with the Marine Stewardship Council or Responsible Fish Scheme label. All fish is processed on the premises and Matthew also smokes fish on site.
